Food: Crunchy Vietnamese salad

I've had a good look at my diet and felt the need to include a few more meat-free days. Usually a sandwich suffices for lunch but after a quick rummage in the fridge, I pulled this together. A Vietnamese-inspired crunchy vegetable salad. Not the prettiest, but seriously yummy.

Vitenamese Vegetable Salad

 
A handful of steamed mangetout
A few slices of fennel
A handful of beansprouts
A carrot, julienned

For the sauce
A tbsp sweet chilli sauce
A splash of fish sauce
A squeeze of lime
A thumbsized bit of lemongrass, finely sliced
A tsp grated ginger
Soy sauce to taste

Garnish
A tbsp roasted peanuts
A tsp coriander
A tsp mint
