Sticky Chicken Drumsticks with Honey and Mustard

The kids love chicken, and as we eat it at least twice a week, I'm having to come up with new recipes to keep them interested and at the same time allow them to try new flavours. Presenting them with something new is always a bit nerve-wracking. They're usually look at the plate sceptically, take a surreptitious sniff and then ask, "What's the dinner called?" (I kid you not!) This is usually followed by the tiniest nibble and then I patiently await their verdict (Believe me, my eyes are rolling on the inside!). 

My latest chicken recipe uses drumsticks as I remember loving to eat these as a child. The kids loved them as they were allowed to use their fingers to hold the chicken, a bit like the cave men in The Croods. I used some manuka honey and grain mustard and the result was an absolute hit! These taste fantastic either hot or cold, so are perfect for picnics.

Ingredients

2 tbsp manuka honey
2 tbsp grain mustard
2 tbsp olive oil
1 tsp black peppercorn, crushed
2 cloves of garlic, crushed
1 lemon
salt for seasoning
8 chicken drumsticks

Method

1. For the marinade: Squeeze all juice from the lemon and mix this with honey, garlic, mustard, olive oil and peppercorns.

2. Place chicken drumsticks into a large sealable freezer bag and then place the marinade into it. Cut up the lemon (minus juice) into 4 and place into bag as well. Season well. Massage marinade into meat and refrigerate for 1hr to overnight.

3. Remove from fridge and place onto a greased roasting tin. Bake in 200C oven for 45min-1hr. The chicken should be beautifully glazed and be separating slightly from the bone. The lemon will be charred but makes a lovely accompaniment.

4. I served this with a green salad and  garlicky baby potatoes.
