Courgette Bhajis

I'm quite keen to introduce the kids to different flavours. Often they'll decide that they don't like something, courgettes in this case, but will completely change their minds once they taste it when served in a different way. Pasta with Courgette and Anchovy is one such favourite and now Courgette Bhajis with their warming South Asian flavours are another. 

These fritters are fantastic when served as an accompaniment to a curry or as a picnic food. I usually eat mine with some mango pickle, but the kids prefer to eat them as is, or with a little mango chutney. The addition of gram flour makes these gluten-free.


Courgette Bhajis 





Ingredients

1 courgette, grated (approximately 250g)
100g chickpea (gram) flour
1 tsp ginger paste
1/2 tsp chilli flakes
1 tsp turmeric
1/2 tsp paprika
1/2 tsp nigella seeds
1 egg
150ml sunflower oil for frying

Method

1. Combine all dry ingredients.

2. Add courgette, ginger and egg and mix well, until no dry bits remain.

3. Fry in hot sunflower oil until golden brown on each side, approx 1 1/2 minutes on each side. Drain on kitchen towel.

4. Serve immediately, those they can also be eaten at room temperature.
