Pico de Gallo Salsa

Spring has finally arrived here in Scotland and as we're expecting some reasonably good weather over the coming weekend, we've decided to celebrate Cinco de Mayo. As I dust off the warm weather recipes, like Crunchy Fish Tacos with Mango Sauce , Chicken and Bean Burritos with Mexican Street Corn , Mexican Venison Sausage and Bean Stew for the Slowcooker or Mexican Bean Stew with Green Rice, I always make some Pico de Gallo as an accompaniment. When I work with these flavours, and like nothing better than polishing off the remains with some tortilla chips. Yum!

Pico de Gallo Salsa


Cinco de Maya




Ingredients
3 large tomatoes, roughly chopped
1/2 red onion, very finely chopped
1/2 tsp dried ancho chilli flakes
1 spring onion, finely chopped
1 red chilli, seeds removed
1 tsp sweet smoked paprika
25g coriander leaves, roughly chopped
juice of two limes
1tsp olive oil
pinch of salt

Method
Mix together all the ingredients and season with salt to taste.
